No Eggs, No Problem (revisited) – My Story in Photos: Dessert Edition

Since i heart faces is doing a dessert edition this week, I thought I would revisit an old post of mine, an oldie but goodie – enjoy!

The other night Mr. Magoo and myself were craving some chocolate. I happened to be thumbing through an old cookbook of mine.

It was a collaborative cookbook that was created with contributions from an online forum I used to be a part of, right after marriage. I thumbed through the pages of desserts, despite my wanting to eat healthy…I guess my will to avoid sweets is weak….when I stumbled upon a recipe called “quick chocolate cake”. Really? Is this for real? I looked at the recipe – no eggs involved. Seriously? How good could this be?

I whipped it up. It smelled delicious cooking in the oven, even though I was a bit skeptical.

I peeked at it and it looked marvelous!

Mr. Magoo inquired if we had frosting for it…nope none. So I dashed to Bakerella’s website for her chocolate ganache recipe (thanks Bakerella!). Alas, I had no heavy whipping cream, but whole milk substituted just fine. And the result?

It was oh-so-yum!!!!!! Death by chocolate for sure, so if you make it, make sure you have milk handy.

Glug. Glug. Glug.

And because I have a slight evil side, here is the recipe:

quick chocolate cake

1 1/2 cups flour

1 cup sugar

1/4 cup baking cocoa

1 tsp. baking soda

1/2 tsp salt

1 cup water

1/2 cup vegetable oil

1 tbsp. vinegar

1 tsp. vanilla

Preheat oven to 35oF

Whisk together all dry ingredients. Add wet ingredients and beat until smooth. Pour into ungreased 8″ x 8″ baking pan. Bake 25-30 min. Serve warm with ice cream if you wish.

- I also added mini semi-sweet chocolate chips to the mixture

  1. It looks so good. I was glad you had the milk pictured because I think I would have had a chocolate overdose just from looking at the picture alone. Pure deliciousness : )
